A lighter, fresher twist on classic hollandaise — ready in just 10 minutes!

Perfectly silky, with a pop of lemon and the fresh bite of chives, this sauce pairs beautifully with poached eggs, steamed asparagus, roasted potatoes, or even artichokes.

Ingredients:

  • 2 egg yolks (preferably free-range)

  • 2 tsp olive oil

  • 1 Tbsp butter

  • 1/8 tsp paprika

  • 1/8 tsp salt

  • 2 pinches black pepper

  • 1/4 cup water

  • 1/4 cup sour cream

  • 1 Tbsp lemon juice

  • 1/4 tsp lemon zest

  • 1/4 cup fresh chives, chopped
